Ingredients needed for chicken curry:


- 1 kg chicken, cut into pieces

- 4 potatoes, peeled and halved.

- 2 onions, chopped

- ginger garlic paste

- 3-4 green chilies 

- 2 tablespoons oil

- 2 bay leaf

- 2 teaspoons salt

- 2 teaspoons sugar 

- 1/4 teaspoon turmeric

- 2 teaspoons coriander powder

- 2 tablespoons of cloves, cinnamon, cardamom and cumin paste. 

- 2 tomatoes chopped 

- 1 glass of water

- Garam masala powder

Directions to prepare chicken curry:


- Heat oil in a large kadai over medium-high heat. Add the potatoes and fry for a few seconds.

-keep aside the fried potatoes.
-in the same oil add some sugar for color and then add the bay leaves and fry for some time. 

- Add the onions and cook until golden, about 15 minutes.

- now add the ginger garlic paste, green chilies and cook well. 

- Add salt, turmeric, coriander powder and chilli powder and stir well.

- Add tomato slices and add some water and now cook for another 5 minutes, stirring occasionally.

- now cover the vessel with lid for some time. 

-  Now open the lid and add chicken and potatoes and also add the cumin, cinnamon, cardamom, cloves paste and mix well with the onion-spice mixture.

- Add water and bring to a boil. Lower the heat and cook gently, covered, until the chicken and potatoes are cooked through, about 25 minutes.

- Now add the powdered garam masala.

- Now serve hot with rice or roti.

Instead, you can  ensure adding cumin, cinnamon, cardamom, cloves paste when your tomatoes are  completely cooked. This will help give your final dish a burst of flavours.
