Ingredients needed for Echor kalia
▪︎ Jackfruit(echor)
▪︎ Potatoes
▪︎ 1 tomato pasted
▪︎ Onion paste
▪︎ Green chilies, ginger and garlic pasted together
▪︎ masala paste( containing cinnamon, coriander seeds, cumin seeds and 3-4 cardamom), and then adding cumin and coriander powder and red chilli powder and mixing it with some water.
▪︎ 1tsp ghee
▪︎ 1tsp salt
▪︎ 1tbsp red chili powder
▪︎ 1tsp coriander powder
▪︎ 1tsp cumin powder
▪︎ 1tsp turmeric powder
▪︎ 1tsp sugar

Pre preparation for echor kalia
1. Cut the jackfruit by peeling the thick skin and remove the hard part from the middle and sides.
2. Soak the jackfruit pieces in turmeric water to get rid of the sap of the jackfruit.
3. Take a cooking pan and boil the jackfruit pieces with salt and turmeric and covering the pan.

Method of cooking echorer kalia
1. Take a kadhai and heat some mustard oil and then fry the potatoes in the oil for some minutes with salt and turmeric powder. After frying take out the potatoes.

2. Add some mustard oil and when it is heated add two bay leaves and sugar, fry them with the oil.

3. Add the onion paste and fry for some minutes until it is red in colour.

4. After this add the green chillies, ginger and garlic paste and fry together for some minutes.

5. Add the tomato paste and fry nicely for some minutes so that the raw smell of the tomatoes go away.

6. Add the masala prepared earlier and mix with the other ingredients nicely.

7. Add some salt, turmeric powder, red chili powder and Kashmiri red chili powder, add some water and cook the masalas for some minutes until the masalas release their oil, cover the kadhai for some minutes.

8. Open the cover after some minutes and you will see that the masalas are cooked; the spices have released their oil, now add the jackfruit pieces and cook with the masalas for some minutes.

9. Add the fried potatoes and cook together with the other ingredients. After this add water and cover the kadhai for some minutes.

10. Now when the cover is opened you will see that the gravy is boiling and the potatoes and jackfruit has been boiled and became soft, now add ghee and mix in the gravy and let some water to get vaporised.
