Hello and welcome to my blog today i would share with you a delicious Bengali cuisine called"cauliflower curry" also known as Alu Phulkopir torkari.


How to Prepare cauliflower curry 

Alu Phulkopir torkari  also known as cauliflower curry  is a traditional Bengali dish that consists of cauliflower florets and potato cubes cooked in a spicy and aromatic gravy. It is a niramish dish, which means it does not contain any onion or garlic, but it is still full of flavor. This dish is usully served with hot rice or luchi (deep-fried flatbread), but you can also enjoy it with roti, paratha, or naan.

INGREDIENTS

The main ingredients for cauliflower curry are : cauliflower, potatoes, tomatoes, green peas, ginger, and some whole and ground spices. You will also need some mustard oil, which is the preferred cooking oil in Bengali cuisine. Mustard oil gives a distinctive taste and aroma to the dish, but if you cannot find it, you can use any other vegetable oil.


Cooking method 

1. The first step to make this dish is to fry the cauliflower florets and potato cubes separately in oil until they are golden brown. This step helps to seal the flavor and texture of the vegetables and prevents them from becoming soft in the gravy. You can also add some salt and turmeric powder while frying them for extra taste and color.


2. The next step is to make the gravy by cooking some whole spices like cumin seeds, bay leaf, cinnamon, cardamom, and dry red chilies in some oil. Then you add some grated ginger and ground spices like cumin powder, coriander powder, turmeric powder, and chili powder. You also add some chopped tomatoes and cook them until they are soft and the oil separates from the spices.


3. Then you add the fried cauliflower florets and potato cubes to the gravy and mix well. You also add some salt and water to cover the vegetables and bring it to a boil. Then you lower the heat and simmer until the vegetables are cooked and the gravy is thickened. You can also add some fresh green peas at this stage for some extra color and nutrition.


4. Finally, you sprinkle some garam masala powder on top of the dish and mix gently. Garam masala is a blend of roasted and ground spices that adds a warm and fragrant touch to the dish. You can also add some ghee or clarified butter for some extra richness and flavor.


5. Your cauliflower curry in Bengali style is ready to serve. Enjoy it hot with rice or bread of your choice. You can also garnish it with some chopped coriander leaves or green chilies for some freshness and spiciness.
