This recipe uses simple ingredients and a pressure cooker to make a delicious mutton curry that can be enjoyed with rice, roti, or luchi.

Ingredients needed for mutton curry:


•1 kg mutton, cut into medium-sized pieces
•2 tbsp mustard oil
•2 tsp salt
•1/4 tsp turmeric powder
•1/4 tsp red chilli powder
•1/4 tsp cumin powder
•1/4 tsp coriander powder
•1/4 tsp garam masala powder
•2 tbsp curd
•2 bay leaves
•4 green cardamoms
•4 cloves
•2 cinnamon sticks
•4 dry red chillies
•2 onions, finely chopped
•1 tbsp ginger paste
•1 tbsp garlic paste
•2 tomatoes, pureed
•2 green chillies, slited from middle 
•4 cups water

Method of preparation of mutton curry:


1. Wash the mutton pieces well and drain the excess water. Marinate the mutton with 1 tbsp mustard oil, 1 tsp salt, turmeric powder, red chilli powder, cumin powder, coriander powder, garam masala powder, and curd. Mix well and keep aside for at least an hour.

2. Heat the remaining oil in a pressure cooker and add the bay leaves, cardamoms, cloves, cinnamon sticks, and dry red chillies. Fry for a few seconds until fragrant.

3. Add the chopped onions and fry on medium-high heat until golden brown, stirring occasionally.

4. Add the ginger paste and garlic paste and fry for another minute.

5. Add the tomatoes and cook until the oil separates from the masala, stirring occasionally.

6. Add the marinated mutton pieces and stir well to coat them with the masala. Fry for about 15 minutes on high flame, stirring occasionally.

7. Add the green chillies, coriander leaves, and water. Adjust the salt as per your taste.

8. Close the lid of the pressure cooker and cook for about 20 minutes on medium-high flame.

9. Turn off the heat and let the pressure release naturally.

10. Open the lid and check if the mutton is cooked and soft. If not, cook for some more time on high flame without the lid until done.

11. Transfer the mutton curry to a serving bowl

12. Serve hot with rice, roti, or luchi.


Tips for mutton curry: 


• You can also add some potatoes to the mutton curry if you like. Cut them into large chunks and fry them separately in some oil until golden brown. Add them to the pressure cooker along with the water and cook as per the recipe.

• You can also use a regular pot instead of a pressure cooker to make this mutton curry. In that case, you will need more water and more time to cook the mutton until soft.
