Method to prepare the dish

Rui maacher jhal is a spicy and tangy fish curry that is popular in Bengali cuisine. It is made with rohu fish, a type of freshwater carp, and flavored with nigella seeds, green chilies, and mustard oil. Here is how you can cook rui maacher jhal.


Ingredients:


- 500 g rohu fish, cut into pieces and cleaned

- 2 tbsp salt, divided

- 1 tsp turmeric powder, divided

- 4 tbsp mustard oil, divided

- 1/4 tsp nigella seeds

- 2-3 green chilies, slit

- 1 onion, finely chopped

- 1 tsp ginger-garlic paste

- 1/2 tsp red chili powder

- 1/2 tsp cumin powder

- 1/4 tsp coriander powder

- 1 tomato, chopped

- 2 cups water

- 2 tbsp coriander leaves, chopped

Instructions:


1. Marinate the fish pieces with 1 tbsp of salt and 1/2 tsp of turmeric powder for 10 minutes.

2. Heat 3 tbsp of mustard oil in a large kadai over high heat. When the oil is hot, carefully add the fish pieces and fry them on both sides until golden brown, about 2-3 minutes per side. Transfer the fish to a plate and keep aside.

3. In the same oil, add the nigella seeds and green chilies and fry for a few seconds until they splutter.

4. Add the onion and cook until soft and golden, about 10 minutes. Add the ginger-garlic paste and cook for another minute, stirring constantly.

5. Add the remaining salt, turmeric powder, red chili powder, cumin powder, and coriander powder and mix well. Cook for 2 minutes, adding a little water if the masala sticks to the pan.

6. Add the tomato and cook until soft, about 5 minutes. Mash the tomato with the back of a spoon to make a smooth gravy.

7. Add the water and bring the gravy to a boil. Lower the flame and cook gently for 10 minutes, stirring occasionally.

8. Gently slide the fish pieces into the gravy and cook gently for another 10 minutes, or until the fish is cooked through and the gravy is thickened. Adjust the salt and sugar if needed.

9. Sprinkle the coriander leaves on top and serve hot with steamed rice or roti.
