Hello and welcome to my blog  today I would share with you how to make khichdi in two ways: a basic version and a more flavorful version(also called as "hotchpotch" in english).

Basic Khichdi Recipe

Ingredients 


1/2 cup of rice (any kind or quinoa, steel cut oats, millets)
1/2 cup of moong dal (skinless petite yellow lentils, or any other dal)
4 cups of water (more to adjust, for porridge consistency)
1/4 teaspoon of turmeric
1/3 teaspoon of salt (adjust to taste)
1/2 tablespoon of ghee (for topping)

To make the basic khichdi, follow these steps:


Wash the rice and dal together in a colander under running water until the water runs clear. Drain well.
Transfer the rice and dal to a pressure cooker or an instant pot. Add water, turmeric and salt. Mix well.
Close the lid and cook on high pressure for 15 minutes or until the rice and dal are soft and mushy. If using a stovetop pressure cooker, wait for 3 whistles or till cooked. If using an instant pot, set the valve to sealing position and use the manual or pressure cook mode.
Once done, release the pressure naturally or manually. Open the lid and fluff the khichdi with a fork or a spoon. Adjust the consistency by adding more water if needed. You can also mash the khichdi slightly for a smoother texture.
Serve hot with a dollop of ghee on top. You can also add some chopped coriander leaves or mint leaves for freshness.

1 teaspoon of ginger (grated or ginger paste, 1 inch piece)
1/2 cup of tomato (deseeded & fine chopped or pureed, 1 medium)
A pinch of asafoetida (hing, optional)
The same ingredients as the basic khichdi recipe
Some chopped vegetables of your choice (optional)
How to make khichdi
Flavorful khichdi recipe 


To make the flavorful khichdi, follow these steps:


Wash and soak the rice and dal separately in water for 20 minutes. Drain well.
Heat oil or ghee in a pressure cooker or an instant pot on sauté mode. Add cumin seeds, bay leaf or curry leaves and asafoetida if using. When the seeds crackle, add onion, green chili, ginger and garlic. Sauté for about 5 minutes or until the onion turns golden brown.
Add tomato and cook for another 5 minutes or until the tomato becomes soft and mushy.
Add turmeric, salt and water. Mix well.
Add the rice and dal along with the chopped vegetables if using. Mix well again.
Close the lid and cook on high pressure for 15 minutes or until the rice and dal are soft and mushy. If using a stovetop pressure cooker, wait for 3 whistles or till cooked. If using an instant pot, set the valve to sealing position and use the manual or pressure cook mode.

- A pinch of asafoetida

- 1/4 tsp of garam masala powder

- 1 tsp of sugar

- 1 tbsp of mustard oil

Steps for preparing kumror chokka:

1. Take a kadhai and heat some mustard oil.

2. Add some hing and two dry red chillies when the oil is heated and mix it.

3. Now add the garlic and fry with the oil.

4. When the garlic is fried add the onions and fry the onions.

5. Add green chilies when the onions have been fried, and now mix the green chillies together.

6. Now add Panchforon and mix together with other ingredients.

7. Now add the black chickpeas and cook together for some minutes.

8. Add the pumpkin cubes and the potato cubes and cook together.

9. Cover the kadhai for some minutes.


10. Open the lid and stir the ingredients together.

13. Add some water and cook until the masalas release their oil.


14. Cover the kadhai and cook for about 2 minutes.


15. Open the lid and you will see that the masalas have released their oil, now add 2 cups of water and stir it.

16. Cover the kadhai again for another 10 minutes to  let the pumkin and potatoes get boiled and become soft. 


17. Open the lid and you will see the dish is boiling and some sugar and garam masala powder, as it will enrich the taste .

How to Prepare cauliflower curry 

Alu Phulkopir torkari  also known as cauliflower curry  is a traditional Bengali dish that consists of cauliflower florets and potato cubes cooked in a spicy and aromatic gravy. It is a niramish dish, which means it does not contain any onion or garlic, but it is still full of flavor. This dish is usully served with hot rice or luchi (deep-fried flatbread), but you can also enjoy it with roti, paratha, or naan.

INGREDIENTS

The main ingredients for cauliflower curry are : cauliflower, potatoes, tomatoes, green peas, ginger, and some whole and ground spices. •1 kg mutton, cut into medium-sized pieces
•2 tbsp mustard oil
•2 tsp salt
•1/4 tsp turmeric powder
•1/4 tsp red chilli powder
•1/4 tsp cumin powder

•1/4 tsp garam masala powder
•2 tbsp curd
•2 bay leaves
•4 green cardamoms

1. Wash the mutton pieces well and drain the excess water. Marinate the mutton with 1 tbsp mustard oil, 1 tsp salt, turmeric powder, red chilli powder, cumin powder, coriander powder, garam masala powder, and curd. Mix well and keep aside for at least an hour.

 Hello and welcome to my blog today I would share with you a delicious recipe for Christmas and birthday,  today I would share with you a recipe to prepare vanilla cake in a shape of a heart without the need of microwave oven.

Ingredients needed for vanilla cake:

- 1 cup of all-purpose flour(maida).

- 1 teaspoons of baking powder

- 1/2 teaspoon of baking soda

- 1/2 cup of refined oil 

-  powdered sugar

- 4 large eggs, at room temperature

- 1 teaspoons of vanilla essence 

- 1/2 cup of milk, at room temperature


Directions to prepare vanilla cake: 

1. Take a bowl and break the four eggs.

2. Separate the yellow part and the white part of the egg ovules.

3. Add 1 teaspoon of vanilla essence to the yellow part of the egg and mix it throughly.

4. Take a mixing bowl and add the white part of the egg and mix it with a hand whisk until it gives a foamy texture.

5. Now add the mix of yellow part of egg and vanilla essence.

6. Beat the mixture for some minutes with the hand whisk and then add the refined oil.

7. Now add the powdered sugar and mix it.

8. Now add 1 cup of maida and mix it properly.

9. Now add 1/2 cup of milk , 1 teaspoon of baking powder,  1/2 teaspoon of baking soda and prepare a  batter.

10. Add the raisins and cashews.

11. Grease the heart shaped baking bowl and add a butter paper to the bowl on which the cake batter is to be poured.

12. Take a kadhai and put sand and heat it and put a wire rack on it.

13. Pour the batter into the heart shaped cake bowl and smooth the top. And put it on the wire rack place in the kadhai with sand and cover it so that the heat does not escape. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.

14. Let the cake cool slightly in the pan before transferring to a plate. 

15. Enjoy your vanilla cake as it is or decorate it with your favorite frosting or toppings.

• One 10₹ pack of amul milk powder 

• 1 pack of Eno 

• 1 small bowl of powdered sugar

• Food oil

Method of preparing biscuit cake 


1. First grind all the biscuits into a powder with the help of a mixer grinder.

2. Add the amul milk powder into hot water and turn it into liquid milk.

3. Take a mixing bowl add the powdered biscuits.

4. Add the powdered sugar, and mix the powdered biscuits and sugar together.

5 Add the pack of eno as it does the work of baking soda and baking powder.

6. Now add some of the liquid milk into the mixing bowl and mix the batter with the help of hand whisk. Repeat the same process two to three times until the batter has a good consistency(not so thick and not so thin).

7. Take a aluminum bowl apply some oil, add the butter paper inside the bowl and apply oil on the paper.

8. Now pour the batter into the bowl and spread it.

8. Take a kadhai and pre-heat some sand in it.

9. Now keep a wire rack on the sand and put the bowl and cover it and leave on low to medium heat for about 30 to 35 minutes, you can give it more time according to your convenience.

10. After 35 minutes open the cover and put a wooden toothpick and if it comes out clean then the biscuit cake is ready, and if it does not come out clean then leave it for some more time.

11. When the cake is done take the bowl out from the sand and let it cool slightly.

12. Cut the sides of the cake with a knife and take out from the bowl and remove the paper from the bottom of the cake.
